During the chilly early days of spring, a warm grain bowl could be the perfect healthy meal to get veggies in your belly without freezing it with a cold salad. This recipe is one of my favorites because it’s not only hearty, but it has a ton of greens that when mixed together, make for a tasty meal.
Makes 2 servings
Ingredients:
⅓ cup of quinoa
½ zucchini, cubed
½ cucumber, cubed
1 avocado, cubed
1 large garlic clove (or 2 small cloves), crushed
Juice from ½ a lemon
1 bunch of parsley, chopped
Pine nuts
Directions:
- Cook the quinoa by combining it with 1 cup of water and let the water boil off with a cover on the pot. Sauté the zucchini in olive oil, salt and pepper.
- Once the quinoa is cooked, assemble the bowl with the quinoa as the base topped with the onion and pine nuts, zucchini, cucumber, and avocado. Then top everything with olive oil, salt, pepper, lemon juice, and then garnish with the chopped parsley.
Note: If you don’t love the taste of raw onion, sauté it with the zucchini to cut the harsh flavor.
