For all the garlic lovers out there, this salad is chock-full of bold flavor, yet it’s healthy and simple to make. The warm lentils make the meal perfect for lunch on a cool day, but make sure you have a place to brush your teeth prior to your afternoon meetings!
Ingredients:
1.5-2 oz of Arugula
10 cherry tomatoes (~4 oz)
8 mozzarella balls (~4 oz)
½ a medium avocado, cut into pieces
1 large garlic clove (or 2 small cloves), crushed
3-4 tbsp olive oil
1/5 cup of lentils
3/5 cup of water (or veggie/chicken stock for flavor)
Salt and pepper
Directions:
- Prepare the lentils. Rinse lentils and then combine the lentils and water (or stock) in a small saucepan. Cover and bring to a boil. Reduce heat and simmer for approximately 15-20 minutes, until tender.
- Prepare the dressing. Finely chop or use a garlic press to crush the garlic. Then mix the garlic in a small bowl with the olive oil. Add salt and pepper for flavor.
- Prepare the salad with arugula on the bottom, followed by the lentils, tomatoes, avocado, and mozzarella, and topped with the garlic dressing.
